I'll keep looking to see if I can find videos from Legion era, but the more modern examples are everywhere. As far as I can tell, this has not changed since pet battles were introduced in Cataclysm. Here's one example video with a timestamp: https://youtu.be/lOy4SBOMV2U?t=126 - The third pet Lifelike Mechanical Frostboar loses 1210 hp when it gets attacked, but as the battle concludes you can see it's HP go up from 5%(ish) to 50%(ish) in the center top of the screen. Dead pets don't recover HP, but any pets that are alive and lost health should recover some.
